1、 Turmeric

Curcuma longa L. is the dried rhizome of Curcuma longa L. The content of curcumin in turmeric is 3% - 6%. The application of curcumin in the food field is mainly divided into three parts: colorants, condiments and functional food raw materials. First of all, let's talk about colorants.Ginger yellow in turmeric is a pure natural yellow pigment, which should be widely used in catering and various forms of food; Secondly, turmeric is used as pungent spice, with pungent, bitter and mild taste, and is often used as curry powder; In the direction of functional food raw materials, curcumin has anti-inflammatory, anti-cancer, anti-oxidation, bacteriostasis, anti-virus and other physiological functions, and has obvious effects on the treatment of many diseases.

Ginger is the fresh rhizome of Zingiber officinale Rose, a plant of Zingiberaceae. The main components of ginger are gingerol (gingerol, gingerol, gingerene, etc.), ginger essential oil, etc.

Curcuma longa and ginger have obvious differences, no matter in appearance, internal chemical composition and specific application, which can distinguish the two species well in specific application.

2、 Turmeric extract

Turmeric extract is an extract extracted from turmeric tubers. The main component of turmeric extract is curcumin, which is a slightly acidic diphenylheptane substance. It is an extremely rare diketone colored substance and a compound with a special structure of polyphenols.

Curcumin is an orange powder, bitter in taste, insoluble in water, and soluble in ethanol, propylene glycol, glacial acetic acid and alkaline solution. However, it will be reddish brown in alkaline environment and yellow in neutral and acidic conditions. Therefore, we should pay attention to whether the medium is oily or water-based, and the color change of pH environment.

Production process flow of curcuma extract curcumin: turmeric raw material - crushing and sieving (24 meshes) - extraction (80% ethanol, three times of micro boiling extraction, 1.5h each time) - concentration (true and fast concentration under reduced pressure) - filtration - separation and purification (DA201 macroporous resin enrichment or silica gel column chromatography) - concentration of eluent - crystallization - high-purity monomer curcumin.

3、 Application of Curcumin in Food Field

1. Application of curcumin in medical field

The application of gingerol in the field of medicine is mainly based on its anti-tumor, antioxidant, anti-inflammatory and other physiological functions. In recent years, clinical studies have shown that curcumin can be used to treat tumors, cerebral infarction, hyperlipidemia and other diseases, as well as hepatitis and eye diseases. In addition, relevant studies have also shown that curcumin has potential therapeutic effects on familial adenomatous polyposis, ulcerative colitis, colon cancer, pancreatic cancer, hypercholesterolemia, atherosclerosis, pancreatitis, psoriasis, and arthritis, and a large number of clinical trials have proved that curcumin has good pharmacological properties, safety, and tolerance.

2. Application of curcumin in cosmetics industry

Curcumin can be used in the production of cosmetics because of its antioxidant, anti-inflammatory, bacteriostatic and acaricidal effects. Studies have shown that curcumin and its derivatives have a good inhibitory effect on tyrosinase, and can also absorb ultraviolet light, so they can be used in the production of cosmetics such as whitening, sunscreen and freckle removal.

The white gelatin enzyme in the skin decomposes the collagen, elastin and other fiber components in the skin under the irradiation of ultraviolet light, while curcumin has the effect of inhibiting the activity of white gelatin enzyme, thereby exerting its anti wrinkle effect.

3. Application of Curcumin in Animal Feed

Curcumin plays an active role in the growth of animals. The research shows that the feed added with curcumin has significant effects on animal growth, production, immune function, etc. The researchers concluded that curcumin can replace the quinolone (antibacterial drug) in the feed of finishing pigs through experimental research. This substitution effect not only does not affect the health of pigs, but also improves the daily weight gain of pigs;
